Fresh Corn and Black Bean Salad

Do you love fresh sweet corn? This Fresh Corn and Black Bean Salad with mildly spicy sour cream dressing comes direct from Jen White, our catering services manager. Hearty black beans tossed with corn, fresh bell pepper, and cilantro are combined with the creamy goodness of a spicy sour cream dressing, and a splash of lime. This salad is refreshing and packed with fiber, vegetables and a tasty spicy goodness.


3 cups                   Fresh Corn off the cob

1 cup                     Black Beans

1 ½ cup                 Red Bell Pepper, diced

½ cup                    Bacon, cooked and crumbled

½ cup                    Grated Parmesan Cheese

2 Tbsp                   Cilantro

1 cup                     Sour cream

1 cup                     Mayonnaise

1 Tbsp                   Lime Zest

2 Tbsp                   Lime Juice

1 tsp                      Garlic

1 tsp                      Chipotle Chili Powder


Mix together corn, black beans, peppers, bacon and Parmesan cheese.  In a separate bowl blend sour cream, mayo, lime, garlic and chili powder.  Mix together with all ingredients.  Fold in cilantro.  Serve immediately or refrigerate for later.
