Chef Kristin Holloway from our Four Seasons Restaurant in the Spring Run Community recently appeared on WPMT FOX43 as part of a Willow Valley Chefs in the Kitchen segment. She prepared Green Beans Gremolata. The recipe is below.
Green Beans Gremolata is simple to prepare and it’s healthy – the perfect addition to your special holiday meal.
INGREDIENTS: YIELD 4 servings
French Green Beans, trimmed — 1 pound
Minced garlic — 2 tsp (2 cloves)
Grated Lemon Zest — 1 Tbsp (2lemons)
Minced Parsley — 3 Tbsp
Softened Butter or Olive Oil — 3 Tbsp
Toasted pine nuts, almonds or walnuts — 2 Tbsp
Grated Parmesan Cheese — 3 Tbsp
Salt and Pepper — To taste
- Add garlic, lemon zest and parsley to softened butter. Blend well and set aside. (Can be made a day ahead)
- Steam green beans to desired tenderness.
- In a large bowl mix green beans, gremolata butter, Parmesan cheese and pine nuts and toss well.
- Season with salt and pepper, but be aware that Parmesan cheese can be salty.
